About the Farm
Finca Guadalupe Zaju sits in the lush Soconusco region of Chiapas, Mexico, right along the Guatemalan border. Once part of Mexico’s historic “Ruta de Café,” the farm is now owned by Teddy Esteve, whose family has been involved in coffee trading for over 150 years. Since taking over in 2004, Teddy has transformed the farm into a high-quality operation focused on productivity, sustainability, and cup excellence.
The farm spans 310 hectares, with 160 under coffee, and is fully shade-grown. It’s certified by Rainforest Alliance, UTZ, and C.A.F.E. Practices, with serious investment in replanting rust-resistant varietals, implementing water conservation systems, and maintaining biodiversity through smart agroforestry practices.

About the Coffee
This fully washed lot comes from Guadalupe Zaju’s Marsellesa and Hybrid trees, grown between 900–1,400 masl. Cherries are hand-picked, sorted, and processed using a Penagos ecopulper and demucilaginator to remove mucilage with minimal water. Fermentation is short and controlled, followed by drying in Guardiolas — mechanical dryers — at low, stable temperatures to preserve clarity and complexity.
Expect a clean, well-structured cup with a balance of sweetness and acidity — a modern example of Mexico’s re-emerging speciality coffee potential.
